This is probably besides the point, but I’m just curious; does Ramsay scream about food being raw or food being overcooked more often? Like, which is more likely the mistake? I’d guess raw more; cuz I feel like they’d be under time pressure more and thus undercook the food more often?

Raw meat is a safety issue, and as a professional chef, he’s much more sensitive to such safety issues. Being overcooked isn’t. Ramsay behaves differently depending on the circumstances; whilst he does play it up for the camera, on shows like Hell’s Kitchen, the expectation is that the people in such competitions are professionals and ought to know better and have higher professional standards, especially if they are after roles in Michelin-starred restaurants. If you make a mistake here, he’s going to be much more critical of your performance because you should know better than to present poorly prepared food in front of him. Whereas on shows like MasterChef, he understands that the people competing there are amateurs; he focuses on being encouraging, constructive, and patient, and being more of a teacher or mentor. If you make a mistake and he sees it, he’ll tell you why it’s wrong, provide guidance on what to do next time, and encourages the person to try again later.

IMO, if you watch him you can tell Ramsay has a temper. He keeps it in check in many of his shows but on Hell’s Kitchen he just lets loose because watching him yell and scream at people has become part of the show’s entertainment value. So HK is just where he goes to let his temper out while in other shows he does a lot to restrain himself.

HK is also professional chefs, which he holds to a higher standard than say Masterchef home cooks, as he should. That said I’m sure the producers purposefully pick some absolute duds for the entertainment factor in HK.

They absolutely pick people who they expect to do stupid/act weirdly on TV. Raj is a great example. The idea anyone could take Raj seriously with his behavior is insane. He was there to be laughed at. Honestly, in most HK seasons, you can readily divide the entire field of competitors into 2 categories; the ones who are actually capable and thought as likely to win, and the ones who are ‘characters.’ The latter rarely make it far into the competition, and usually have a few personalities so weird they had to be picked because they were weird, not because anyone expects them to do well.

In Hell’s Kitchen, the dinner service is timed against the other team, so undercooking is the far likelier outcome. Most cooking competitions Ramsay oversees have some timing element and I think this keeps food from over-cooking/baking, etc. When he does Kitchen Nightmares, that’s visiting a restaurant and it’s often over done
