Now granted, if you were very determined and had a lot of patience you could filet and trim the shit out of the meat down to where you have nothing but pure white chunks and those wouldn’t be so bad but typically most people after cat fish have a particular “eating size” in mind. Deep Fried Catfish is one of my favorite’s when done right. When it’s bad it’s awful though

Right around 20-24 inch is eating size for the catfish I’ve gone for. Smaller than that and they arent worth the effort unless you are starving. Bigger and they start tasting like poopy mud. You can fix that a bit with hot sauce, but it really ramps up fast the bigger they get

In the southern states “thin cut filets” have become popular and synonymous with high quality in some restaurants but the reality is they just cut it very thin to cut back on the negative taste that some catfish can develop. I’m no expert on skinning and cutting filets but I’ve got some neighbors who are huge catfishers and they tell me the secret is to cut all the grey/black shit out and only leave the white meat for the best flavor. I’ve got to say I agree with them from what they have given me. Of course this requires catching enough to be willing to waste all the bad tasting bits

This is misinformation. Blue catfish and flathead catfish aren’t bottom feeders. Both routinely chase schools of live fish. Flatheads are notorious for wiping out other fish and there are programs to remove them from some rivers. It has nothing to do with what they eat, it is due to where they live and geosmin, a naturally occurring organic compound. Catfish (and some other freshwater fish) accumulate geosmin from the algae and bacteria in the sediment where they live, giving them that earthy, muddy flavor. https://en.wikipedia.org/wiki/Geosmin#Effects

Probably still mostly from algae they consume, though, even if as a side product. I can’t imagine absorption through skin being stronger than through the sediment they end up eating. I might be wrong, maybe geosmin can’t survive intestines.

It’s not through the skin so much as through the gills – it absorbs right into their blood. They will also absorb it from food, too, though. Incidentally, you can easily flush the geosmin out of a fish by keeping it in clean water for a couple of weeks. Not that the people in this video are going to do that, obviously, but it’s a thing in aquaculture.

Yes. All catfish is good to eat if prepared properly. Gotta soak that meat in milk or saltwater and make sure to cut to blood lines off the meat.

Best I can describe it is you know on how you get a piece of salmon and you flip it over in the dark gray part is super strong. Gamey flavor versus the nice pink flesh on the top side. Yeah as a catfish gets bigger. It’s like the same thing except that easy to scrape off part gets thicker and thicker until it’s the entire filet

Yes the big ones typically are not good eating. You just want a regular like 3-5 lb catfish if you want it to also still taste good.

When I was a kid we used to catch 20 to 30 lb catfish in Louisiana and they tasted great
